Foodie Fundraisers: Cheeky Chocolate Cake

Looking for a good excuse to get together and eat? Us too. Always. You can turn your talent for cooking (and eating!) into a fundraiser for a cause you care about. Have friends over for Ice Cream Sundaes on Sunday or Tacos on Tuesday. Offer to bake and deliver your famous carrot cake to 3 lucky donors. Host a sushi-making class and donate the proceeds. Here’s a ridiculously simple and moist chocolate cake you can whip up for your next fundraiser. We call it “Cheeky Chocolate Cake” because it tastes so-good-it-must-be-hard-to-make. But it’s such a breeze to whip up, you’ll feel a little cheeky when it passes as gourmet. We promise you’ll get lots of compliments (when you do, don’t mention how easy the recipe is).


For the cake you’ll need:

1 1/4 cups sugar

1 cup buttermilk or milk plus 2 teaspoons Apple Cider Vinegar to equal 1 cup

2/3 cup vegetable oil

2 eggs

1 teaspoon vanilla

1 1/2 cups all purpose flour

1/2 cup unsweetened cocoa powder

1 1/4 teaspoons baking soda

½  teaspoon salt

Turn your oven on to 350°F. Grease two 8-inch-diameter cake pans with 1 1/2-inch-high sides. Blend  first 5 ingredients in large bowl with a whisk or fork. Sift in flour, cocoa powder, baking soda and salt. Pour the batter into the prepped pans and bake for 25 minutes or until a knife or toothpick comes out clean when you insert it in the center of the cake. Let the cakes cool slightly in the pans then flip them onto cooling racks to cool completely. You can prepare the cakes a day ahead and store them at room temperature in plastic wrap.

For the frosting you’ll need:

1 (8-oz.) container mascarpone cheese 

1/4 cup powdered sugar 

2 teaspoons vanilla extract 

1 cup whipping cream

Mix together the cheese, sugar and vanilla until smooth. Beat the whipping cream with a mixer or whisk until stiff peaks form. Gently fold whipped cream into cheese mixture and combine. Spread between cake layers and on top. Enjoy!
